Pamela’s Pancake and Baking Mix has been my favorite for years. Occasionally I try something new but it never works as well. I can count on this mix to make anything I want. I tried the Cider Donuts recipe this year and everyone loves them. I can’t stop making them! (I highly recommend a baby cakes electric unit for these as so much faster to scoop into and 3-4 minutes to bake). Usually I just make what ever I’m thinking I would like to have and adapt my own recipes because that’s the kind of cook I am….I just wing it without recipes or use them as a guideline. This mix ALWAYS works! My friends use it for ebelskivers because they like the taste and texture better than their original recipe. It’s so nice to have this ready-to-use mix and not have to bother mixing flours, adding leavening and xanthan gum. Happy baking and enjoy what you have made!
We add fruit, walnuts, vanilla and cardamom and make a big batch to eat through out the week. Top them off with a little bit of maple syrup, hot fruit, yogurt and a dash of cinnamon and ground spearmint. Yummy!
Maybe it's me. I have tried all kinds of gluten free products....cardboard at the very least! I wasn't diagnosed as being gluten intolerant but noticed on my own that I got sick when I ate wheat products .

This makes the best gluten free pancakes we have ever had and we have tried tons. We all love it so much we eat pancakes 1-3 times a week. We love adding chocolate chips or blue berries. I know it is also a baking mix, but we haven’t tried it for anything other than pancakes. It tastes so good, I’m sure it would be good for anything.

I make biscuits with this: 2 cups pancake mix, 1/4 cup grated frozen butter, mix, then add just enough whole buttermilk until all is moist enough. Stir, scoop out with ice cream scoop into heated and buttered cast iron skillet and bake at 450° until browned. It takes some practice but everyone loves them.

First of all my name is Pamela.
BUT when I found this on the shelf at our local food bank in my hometown I was happy. Then I used the product and discovered that I had to find out where this is sold! It is better than the name brands and I had to locate it again. The locations listed here are not dependable, so I subscribed to ensure I have it from now on.

We serve Pamela’s pancakes to our visitors and nobody can tell they are gluten free. I add blueberries & bananas and use sparkling water when I want the fluffy and fruity.
