    This is the one that started it all. Our original gluten-free pancake recipe has been the hands-down family favorite for breakfast since 1988, and it is still as simple and satisfying as ever: light, fluffy, golden pancakes made in minutes with just a few ingredients and our Baking & Pancake Mix. Stack them high with butter and real maple syrup, or dress them up with chocolate chips or fresh blueberries. So good, no one will guess they are gluten-free.

    Ingredients

    1. Preheat a griddle over medium-low heat (about 350°F) and lightly oil it.
    2. Mix all the ingredients together until there are no lumps. The batter should be pourable but not too thin, so add a little more water or mix as needed to adjust. Do not overmix.
    3. Pour ¼ cup of batter onto the griddle for each pancake.
    4. Cook until bubbles start to form on top and the edges begin to dull, then flip once.
    5. When cooked through, remove and serve immediately with fresh butter and real maple syrup.
    6. For extra-fluffy pancakes, use soda water in place of the water.

    Make ahead & storage

    • Cook extra pancakes, cool them, wrap in plastic, and freeze for up to 1 month.
    • To reheat, remove the plastic, wrap a stack in a paper towel, and microwave until hot, about 1 minute (15 to 20 seconds for a single pancake).
