⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS:⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 cup pamelasproducts all-purpose flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/4 cup pumpkin purée⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2/3 cup smooth peanut butter (not runny)⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 cup brown sugar substitute⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 egg⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tsp vanilla⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tsp pumpkin spice⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/4 tsp salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 cup chocolate chips⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INSTRUCTIONS:⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Preheat oven to 350°F.⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. In a mixing bowl, mix together everything except the flour and chocolate chips.⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Mix in the flour until combined.⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Fold in the chocolate chips.⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. Using a 1.5” cookie scoop, scoop out the cookies onto a parchment lined baking sheet. Cookies will not spread.⠀⠀⠀⠀⠀⠀⠀⠀⠀
6. Bake for 10-12 minutes.⠀⠀⠀⠀⠀⠀⠀⠀⠀
7. Remove from oven and allow to cool. Enjoy!⠀⠀⠀⠀⠀⠀⠀⠀⠀

Recommended weekend project: homemade vegan and gluten-free bagels, à la @thefamilyfoodproject 🥯
Ingredients:
3½ cups @pamelasproducts Bread Mix
2¼ tsp or 1 (fresh!) yeast packet
1⅓ cups warm water
¼ cup oil (we use olive oil)
Method:
Combine all ingredients and mix well. Split dough into 6 equal parts and form bagel shapes by making balls and then using fingers to make a hole in the middle of each, gently pressing down to flatten a bit. Allow the dough to rise at room temp for 1 hour OR cover them on a sheet tray and they can rise overnight in the refrigerator. When ready to eat, bring a pot of water to a gentle boil and using a slotted spoon, drop the bagels in one at a time to boil for 30 seconds each. Place them on a greased and lined sheet pan and sprinkle them generously with bagel seasoning, flaky salt or sesame seeds. Bake at 400° for 20-25 minutes. We like them sliced and toasted! Be sure to eat them within a day because they do go stale as they have no preservatives. Best when eaten right away.

These Gluten Free and Dairy Free Brownies by @fit_n_clean_mama will get you through the week! Recipe below (makes 12-16 brownies):⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 2 whole eggs⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1/2 C coconut oil, melted⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1 tsp vanilla extract⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 2 Tbsp water (or almond milk)⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1/2 C @pamelasproducts gluten-free all purpose flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1/4 C coconut sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1/4 C cacao (or 100% cocoa) powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1/2 tsp baking soda⠀⠀⠀⠀⠀⠀⠀⠀⠀
• pinch of salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1/4 C vegan chocolate chips⠀⠀⠀⠀⠀⠀⠀⠀⠀
.⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a large bowl, whisk together melted coconut oil + coconut sugar till smooth. Add eggs one at a time + vanilla and whisk till smooth. Add flour, cacao powder, and baking soda and whisk till just combined. Pour in water/almond milk to help this along. Finally, fold in chocolate chips, reserving a few for the top! Pour into an 8 x 8 baking dish sprayed with cooking spray. Bake at 350F for 16-18 min, or until a toothpick comes out clean in the center. Store in an airtight container for up to 5 days.⠀⠀⠀⠀⠀⠀⠀⠀⠀
