Easy Vanilla Mug Cake

It uses our Vanilla Cake Mix scaled down to a single serving, with just enough egg and oil to give it a proper soft, tender crumb rather than the rubbery texture mug cakes are notorious for. Use a plant milk and it is gluten-free and dairy-free. Add a spoonful of sprinkles and you have a birthday cake for one.
