    Ingredients

    • 1.5 cups Pamela's Pancake & Baking Mix
    • ½ cup butter, softened
    • ¼ cup white sugar
    • ¼ cup brown sugar
    • 1 large egg
    • 1 teaspoon vanilla
    • 1 cup chocolate chips
    • ½ cup chopped nuts (optional)

    Directions

    1. Preheat the oven to 325°F and spray a 9-inch springform pan well.
    2. Cream the butter, white sugar, and brown sugar until light and creamy. Beat in the egg and vanilla until well combined. Add the Baking & Pancake Mix and mix until incorporated, then stir in the chocolate chips and the nuts, if using.
    3. Spread the dough into the prepared pan, flattening it with a spatula or moistened fingers for a smooth, even top.
    4. Bake 33 to 38 minutes, until the middle is cooked through. If the edges brown too quickly, tent loosely with foil. Let cool completely before removing from the pan, then decorate as desired.
    5. Make it a celebration: Pipe a frosting border around the edge, add sprinkles, or write a message in the center for a birthday cookie cake. The recipe can be doubled for a taller cake.

    I have been baking something similar to this recipe for years now. I skip the sugar. Toss 7 dates, 1 egg, butter, applesauce (just to get everything to blend nicely) into food processor. Mix in 1 and 3/4 c Baking mix – chocolate chips and pecans. Once you make this a few times you will understand how much applesauce to add for best consistency. I bake as cookies rather than a cookie cake.
