    Contains peanuts. These cookies are made with peanut butter. Pamela's mixes are produced in a peanut-free facility, but this recipe adds peanut butter, so the finished cookies contain peanuts.     1. Preheat the oven to 325 degrees F and lightly grease a cookie sheet or line it with parchment.
    2. In a large bowl, cream the butter and peanut butter together until smooth. Beat in the brown sugar, egg, and vanilla until light and fluffy.
    3. Add the Pancake & Baking Mix and stir just until a soft dough forms. Do not overmix.
    4. Scoop level tablespoons of dough about 2 inches apart. Flatten each with a fork in a crisscross pattern, and sprinkle with granulated sugar if you like a little sparkle.

    Directions

    1. Preheat the oven to 350 degrees F with a rack in the center. Line sheet pans with parchment.

    Make ahead and storage

    • Store baked cookies in an airtight container at room temperature for up to 5 days.
