A quick yeasted dough made from our Bread Mix wraps a rich filling of spinach, artichokes, and three cheeses, and they are just as good warm from the oven or cold off the platter. They are vegetarian, they make ahead beautifully, and they disappear fast, so make plenty. Deliciously gluten-free, the way Pamela's has done it since 1988.

    Ingredients

    Dough

    • 1 bag (3½ cups) Pamela's Gluten-Free Bread Mix, plus more for rolling
    • 1 yeast packet (2¼ teaspoons), enclosed in the 19 oz bag of mix
    • ½ teaspoon salt
    • ¼ cup oil
    • 1¼ cups warm water

    Filling

    • ¾ cup lightly steamed, finely chopped spinach
    • ⅓ cup finely chopped artichoke hearts, rinsed if marinated
    • ½ cup grated mozzarella cheese
    • ½ cup grated pepper jack cheese
    • 1 tablespoon Parmesan cheese
    • 2 ounces cream cheese, softened
    • 1 egg
    • 2 tablespoons onion, finely chopped
    • 1 teaspoon butter
    • 1 tablespoon gluten-free breadcrumbs
    • ¼ teaspoon salt
    • ¼ teaspoon garlic powder
    • 1 tablespoon cornstarch
    • ¼ teaspoon nutmeg
    • 1 egg, well beaten, for brushing

    Directions

    1. Make the dough: in the bowl of a heavy-duty stand mixer, combine the Bread Mix, yeast, and salt. Add the oil and warm water and mix on medium speed for 3 minutes. Turn into a greased bowl, cover with a moist cloth, and let rise in a warm, draft-free spot for 1 to 2 hours.
    2. Make the filling: slowly saute the onion in the butter until translucent. Cream together the egg and cream cheese, then mix in the mozzarella, pepper jack, and Parmesan. Stir in the spinach, artichokes, and onion. Add the salt, garlic powder, breadcrumbs, cornstarch, and nutmeg and mix well.
    3. Roll and cut: roll the dough out on parchment or plastic wrap, using plenty of extra mix to prevent sticking. Roll it as thin as possible for the crispest crust, then cut rounds with a 3- or 4-inch cutter.
    4. Fill: mound a tablespoon or more of filling in the center of each round. Lift the round onto a spatula and into one hand, and with the other hand fold the dough up around the filling, leaving some filling showing at the top.
    5. Bake: brush the tops and outsides with the beaten egg. Bake on the bottom rack of a preheated 375°F oven for 7 minutes. Brush again, move to the top rack, and bake a final 7 to 8 minutes, until the crust is golden and the filling is hot.
