    Bring the carnival home with crispy, golden gluten-free mini corn dogs, just as fun and just as dippable as the ones you remember. Store-bought corn dogs are almost never gluten-free, but these are, with a cornmeal-flecked batter made from our Bread Mix wrapped around bite-size beef hot dogs. They are gluten-free and dairy-free, they are a guaranteed hit with kids, and they are perfect for game day, parties, and after-school snacking.     Ingredients

    • 2 cups (300 g) Pamela's Bread Mix
    • 1 cup yellow cornmeal
    • 1 teaspoon sea salt
    • 2 eggs, beaten
    • 2 cups warm water
    • 8 uncured, nitrate-free, gluten-free 100% beef hot dogs
    • 16 heavy-duty bamboo skewers
    • Vegetable oil, for deep frying

    Directions

    1. In a deep fryer or heavy pan, heat about 2 inches of oil to 350°F.
    2. Cut the hot dogs in half to make mini hot dogs. Thread a skewer lengthwise through the center of each, then pat them dry with a paper towel, which helps the batter stick.
    3. In a medium bowl, whisk together the Bread Mix, cornmeal, and sea salt. Whisk the eggs and warm water together, add to the dry ingredients, and whisk until smooth. The batter should be thick enough to coat and cling. For the easiest coating, pour it into a tall glass.
    4. Working one at a time, dip each hot dog through the batter until heavily and evenly coated, smoothing the surface. Gently lower two at a time into the oil so they are submerged, with the skewers angled out of the pan. Fry about 4 minutes, until deep golden brown. Drain on a wire rack. Repeat with the rest.
    5. Serve hot with your favorite dipping sauces.
