Ingredients

FOR THE DONUTS
2 cups + 2 tablespoons (298 g)Pamela's Pancake & Baking Mix
¼ teaspoon nutmeg (optional)
¼ teaspoon cinnamon (optional)
½ cup white or brown sugar
1 egg, large
2 tablespoons melted butter
‚Öî cup milk or buttermilk
1 teaspoon vanilla
FOR THE CHOCOLATE GLAZE
2 ounces melted unsweetened chocolate
½ teaspoon vanilla
1 cup powdered sugar
2 to 3 tablespoons warm cream or milk

Directions

Preheat oven to 350°, with rack in the middle of oven. Spray donut pans with nonstick cooking spray. Set a wire rack over a sheet pan lined with parchment paper.
TO MAKE DONUTS USING DONUT PAN: In a medium bowl, whisk Baking & Pancake Mix, spices, and sugar together. In a small bowl, beat egg, then add butter, milk, and vanilla. Add egg mixture to dry ingredients and mix well to combine.
Pour batter or pipe it from pastry bag into donut molds, until about three-quarters full. Bake 12 to 14 minutes, until donuts are starting to pull away from sides of pan and turn golden on the edges, and they spring back when gently touched.
Allow to cool a few minutes before gently removing from pan to cool completely on wire rack. When donuts are cool, coat with glaze.
TO MAKE DONUTS USING DONUT MACHINE: Decrease Pamela's Baking & Pancake Mix to 2¾ cups and increase milk or buttermilk to 1 cup; the rest of the ingredients stay the same. Mix all ingredients together and bake in donut machine according to machine directions. When donuts are cool, coat with glaze.
TO MAKE CHOCOLATE GLAZE: Mix chocolate, vanilla, and powdered sugar together, then add milk slowly until correct consistency for glazing is reached. If glaze cools and hardens too much to work with, set bowl over pan of hot water for a minute and then stir glaze. Pour glaze over donuts, or dip donuts into glaze. Sprinkle with candies, coconut, chopped nuts, etc.
