Helpful Hints:

  • Will work in most recipes as a replacement for wheat flour.
  • Due to the subtle flavor, seasoning and herbs will elevate the taste when making gravy, or coating meats and poultry.
  • Batters may thicken as they sit and may require water to thin.
  • For yeast breads, we suggest using 1 tsp dry yeast per cup of All-Purpose Flour. Additional water will most likely be needed. Add water until dough is a sticky batter similar to banana bread. For a taller loaf, use a parchment collar at least 3 to 5 inches above the edge around the interior of the bread pan

Excellent product

Pamela's flours are an excellent product. I make items for customers who are highly sensitive: if there was gluten in her flours my customers would not be buying from me. I have tried gf bread recipes from a gf bakery chef, but I still prefer Pamela's. Great product! Don't change anything!

this flour is no longer gluten free!! I used this flour for yrs until pamelas sold the co. last batch I used made bread and it gave me terrible gas..made muffens and it did the same. tried eating the bread and muffins several times and each time the same thing happened..there is gluten in it!!!!!

Best I've ever tried

Pamela's Products are synonymous in my mind with quality and good flavor, but not all of them work for me because they include ingredients that have stopped playing well with my G-I tract. (For instance, Pamela's actual Bread Mix has inulin in it, the Pancake Mix includes dairy, etc. Can't do mixes such as those.) This one I can actually use. Plus, unlike the "all-purpose" flour mix from another well-known brand that I have been buying, Pamela's All-Purpose Mix is also suitable for baking bread, a detail that makes it truly "all-purpose." Took me a while to find that particular bread recipe in Pamela's online file for some reason, but I did, and I'm absolutely delighted with how my first loaf of bread turned out! It has a beautiful texture right out of the oven with an excellent kind of nutty flavor that's without the odd aftertaste GF breads can have. I sliced it thin and have kept the slices in the fridge for several days now. That isn't the optimal way to store it I'll admit, but it has held up well for use as toast and in making grilled cheese sandwiches, which are the kinds of things my bread tends to be used for anyway, so I'm good with that. I originally intended to buy several bags of the All-Purpose Mix for a type of "just-in-case" staple to have on hand. I still plan to do that, but frankly I'm thinking I should ditch buying disappointing ready-made GF bread and just make my own with this flour from here on out. The flavor difference makes it totally worth the extra effort. My thanks to you and your team for this lovely product, Pamela.
