Grahams S'mores Crispy Treats

Ingredients

  • ¼ cup butter
  • 5 oz marshmallows
  • 2 cups gluten-free crisp rice cereal
  • About 4 oz Pamela's Honey Grahams (about half a box), broken into small pieces
  • ½ cup milk chocolate chips (or any chocolate you prefer)
  • Nonstick cooking spray, for greasing

Directions

  1. Grease an 8x8-inch baking dish with nonstick spray. Set an oven rack in the upper third and heat the broiler to high.
  2. In a large oven-safe pot, melt the butter over medium-high heat. Add the marshmallows and stir to coat.
  3. Place the pot under the broiler just until the marshmallow tops are golden, watching the whole time. This happens fast, in a minute or less, and gives that toasted-s'mores flavor.
  4. Return the pot to the stove and stir until the marshmallows are melted and smooth, then remove from the heat.
  5. Fold in the crisp rice cereal, Honey Graham pieces, and chocolate chips, stirring just until everything is coated. Work quickly so the chocolate streaks through without fully melting.
  6. Scrape the mixture into the prepared pan and press firmly into an even layer. Let cool completely, then cut into squares or bars.
  7. Broiler safety: Use an oven-safe pot with a metal handle, and do not walk away. Marshmallows toast in seconds and can burn quickly under a broiler.
  8. To keep it gluten-free: Use a certified gluten-free crisp rice cereal, since standard crisped-rice cereals often contain malt flavoring made from barley. Pamela's Honey Grahams are GFCO-certified gluten-free, and your marshmallows and chocolate should be labeled gluten-free too.
