Matcha Crepe Cake

Ingredients

  • 4 eggs
  • ¼ cup butter, melted
  • 3 ¼ cups Coconut milk
  • 1 tsp Vanilla extract
  • 3 tbsp matcha
  • ½ cup sugar
  • 1 cupPamela’s Artisan Flour
  • Pinch Salt
  • 1 pint heavy whipped cream
  • 1 tbsp matcha
  • 3 tbsp powdered sugar

Directions

  1. Mix dry ingredients and wet ingredients separately.
  2. Combine the two mixtures in a blender and mix until smooth.
  3. Grease a frying pan, pour batter, and cook crepes on both sides. Because we use gf flour it’s a little trickier and I pretty much had to toss the first 4-5 that I made until I find the right temperature. Because they are crepes and not pancakes, they are very thin and more fragile to handle. I placed them on a cooling rack until they were completely cooled.
  4. Whip whipping cream until medium peaks form, add the matcha and the powdered sugar, taste it and adjust if necessary.
  5. Assemble layers alternating between crepes and filling.
  6. Finish with a dusting of matcha and powdered sugar.
