Make the crust

  1. Preheat the oven to 350°F with a rack in the center. Line a 9x13-inch metal baking pan or quarter sheet pan with parchment and spray well.
  2. Crush the grahams in a plastic bag or food processor. Mix in the melted butter and sugar until combined, then press firmly into the bottom of the pan. Lay a piece of parchment over the crust and press down with your fingertips for a smooth, firm, even layer. Bake 10 to 12 minutes, until puffy in spots and the butter looks like it is sizzling. Cool completely on a wire rack.

3. Once the crust is cool, whisk the brownie mix and almond meal together in a large bowl. Add the egg, oil, and coffee or water, and mix well. Stir in 1 cup of the mini marshmallows.
4. Pour the batter over the cooled crust, filling all the corners and edges (it does not need to be smooth). Scatter most of the remaining marshmallows over the top and press them firmly into the batter, then fill any gaps with the last handful and press again.
5. Bake 20 to 25 minutes, until the marshmallows are golden brown and puffy in spots. Cool completely on a rack before cutting.
6. Lift the bars out using the parchment and peel it off. Spray a long straight knife with nonstick spray to cut clean bars, respraying whenever it starts to stick.
