    Crispy on the outside, tender on the inside, and packed with sweet-and-smoky heat: these gluten-free honey chipotle hush puppies are dangerously addictive. Hush puppies are little fried cornmeal fritters, a Southern classic, and this version gives them a kick with smoky chipotle peppers, sweet honey, and fresh green onion, all built on our Cornbread & Muffin Mix. Serve them hot with the honey butter dipping sauce and watch them disappear. This was a Praiseworthy winner in our 2012 recipe contest, created by Pamela V. Deliciously gluten-free, the way Pamela's has done it since 1988.

    What does honey chipotle taste like?

    It is the classic sweet-heat combination. Honey brings the sweetness, and chipotle peppers, which are smoked, dried jalapeños packed in adobo, bring a smoky, spicy warmth. It is savory and a little sweet, more smoky than fiery, and closer to a sweet barbecue note than a straight hot sauce. As written, these hush puppies land on the mild-to-medium side, and the heat is easy to dial up or down.

    Ingredients

    Hush puppies

    • 2 cups Pamela's Cornbread & Muffin Mix
    • ¼ cup sugar
    • 2 green onions, thinly sliced
    • 2 chipotle peppers in adobo, chopped
    • ¼ cup honey
    • 2 eggs, lightly beaten
    • 1 tablespoon milk
    • Salt, to taste
    • Canola oil, for frying

    Honey butter dipping sauce

    • 2 tablespoons butter, softened
    • 2 tablespoons honey

    Directions

    1. In a medium bowl, combine the Cornbread & Muffin Mix, sugar, green onions, and chipotle peppers. In a measuring cup with a spout, combine the honey, eggs, and milk. Pour the wet ingredients into the dry and stir gently with a fork until thoroughly combined. The batter should have the consistency of thick hummus. If it is too thick, add a splash of milk; if too thin, add a sprinkle of the mix.
    2. Fill a heavy small saucepan with about 2 inches of canola oil. Set over medium-high heat and heat the oil to 315 to 325°F (see the frying note). Using a mini ice cream scoop and working in batches of four, scoop small balls of batter into the hot oil. Turn occasionally with a metal slotted spoon and cook until evenly golden brown, about 2 to 3 minutes. Remove to a paper-towel-lined plate and sprinkle with salt. Repeat, keeping the oil temperature steady.
    3. Make the honey butter: stir the softened butter and honey together until smooth. Serve immediately alongside the hot hush puppies.
    4. A note on frying: for the crispiest, least greasy hush puppies, do not crowd the pan and keep the oil hot. If your first batch comes out greasy or doughy in the middle, raise the oil toward 350°F.
