    1. In a medium bowl, whisk together the Pancake & Baking Mix, Cornbread & Muffin Mix, and salt.
    2. In a small bowl or 2-cup measuring cup, whisk the eggs, then add the oil, vanilla, and milk and whisk again.
    3. Pour the egg mixture into the dry mixture, add the corn kernels, and stir just until combined — a few small lumps are fine.
    4. Heat a pan or griddle over medium-low heat (about 325°F), greasing lightly with oil, butter, or nonstick spray.
    5. Pour ¼ cup of batter for each pancake onto the hot pan.
    6. Once the edges start to set, sprinkle the tops with blueberries. Flip when bubbles rise to the surface and the bottoms are golden brown.
    7. Cook until the second side is golden, then remove. Serve warm with your favorite syrup.
    8. Want the corn and berries on top? Before pouring, scatter corn and blueberries in a 4-inch circle on the pan, then pour ¼ cup of batter over them, starting in the center and working outward. Flip when bubbles appear and the bottom is golden.
