    Ingredients

    With Pamela's Baking & Pancake Mix

    • 1 large egg
    • 1 tsp water
    • 3 Tbsp buttermilk (or 3 Tbsp milk + ¾ tsp vinegar, or 2 Tbsp plain yogurt)
    • ⅓ cup Pamela's Baking & Pancake Mix
    • Optional: 1 tsp sugar

    • 1 large egg
    • 1 tsp water

    Directions

    Grease the inside of a large latte cup, a small glass or ceramic bowl, or a 1-cup glass measuring cup with oil, butter, or nonstick spray.

    Mix the egg, water, and buttermilk well in the cup.

    Combine your mix with the sugar (Baking & Pancake version) or the baking powder (Bread Mix version), add to the wet ingredients, and stir until smooth.

    Wipe the extra batter from the sides of the cup with a spatula or your finger. Microwave on high for about 85 seconds. Time varies with your microwave's wattage and whether the cup is glass or ceramic.

    Turn out onto a rack to cool before slicing. If the bottom isn't fully cooked, return it to the cup and microwave in 5–10 second bursts until done. Don't overdo it - microwave bread firms up fast and can turn rubbery if overcooked.
