Peanut Butter & Jelly Muffins

Ingredients

  • 2 cups Pamela’s Pancake & Baking Mix
  • 1/2 cup granulated sugar
  • 1/4 cup firmly packed light brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 5 tablespoons unsalted butter, melted and slightly cooled
  • 1/2 cup peanut butter
  • 1 cup milk
  • 2 tablespoons sour cream
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • Your choice of fruit jelly, preserves, or jam (such as strawberry, grape, or raspberry)

Directions

  1. Preheat oven to 400F.
  2. Place muffins liners in your muffin tin. Put aside.
  3. In a large bowl, mix together the dry ingredients; Pancake & Baking mix, granulated sugar, light brown sugar, baking powder, baking soda, and salt.
  4. In two separate small bowl, melt peanut butter and butter. Once they are melted, mix into the dry mix.
  5. You can now add eggs and wet ingredients.
  6. Pour the mixture into the lined muffin tin. Once the batter is in the tin, add a dollop of jelly of your choice and swirl in with a toothpick.
  7. Bake for 14-18 minutes. Serve warm!
