Great Product for GF Vanilla Cake

I always use this mix for all of my white cake needs. It is one of the best and so easy for those of us that do not have the room for the different GF flours available. The only would be the shipping could be better, last shipment received there were 2 bags cut open, and I was unable to use.

I use this cake mix for so many things. A base for dessert bars, brownies ( just add cocoa) or Raspberry filled cake. It’s SO good!!

We use this in a staple dessert in our restaurant since we changed to GF about 25 years ago

Sherry Bundt Cake
1 package Pamelas GF yellow cake mix
1 package vanilla pudding mix
1 Tbsp. sugar
2 Tbsp GF flour
4 eggs
¾ cup vegetable oil
1 cup cream sherry
1 tsp. nutmeg
Beat 4 minutes, pour into greased and sugared Bundt pan and bake 45 to 55 minutes at 350 degrees till pick comes out clean.
When completely cold turn out on plate and dust with powdered sugar.

Absolutely lovely cake mix. I added the almond extract & used almond oil & the cake is light & fluffy. I put raspberry jam in between the layers & it's light & delicious. I was going to add lemon cream cheese frosting but, it's fine without it.

Can I use buttermilk instead of water in the Classic Vanilla Cake Mix?

Yes, and it's a lovely swap. Buttermilk goes in one-for-one in place of the water, so 2/3 cup buttermilk alongside the 1/2 cup oil and 3 large eggs the recipe calls for.

What you'll get is a slightly richer cake with a tender crumb and a subtle tang that plays really nicely against vanilla. Buttermilk is thicker than water, so your batter will look a little heavier going into the pan. That's expected. If it feels too stiff to pour smoothly, a tablespoon of milk or water will loosen it right up.

Everything else stays the same: 325 degrees, beat for two minutes after adding the dry mix, and use the pan sizes and times on the side panel. Buttermilk browns a touch faster, so start checking a few minutes before the low end of the range. The cake is done when it springs back to a light touch.

One note in case it matters for your table: our Vanilla Cake Mix is dairy-free on its own, so using buttermilk will make the finished cake a dairy cake. If you need to keep it dairy-free, a plant milk with a teaspoon of lemon juice stirred in and rested for five minutes gives you a similar tang.
