Vanilla Layer Cake with Strawberries

Beautiful and delicious! Substitute any seasonal fruit for the strawberries. Made with our Artisan Flour Blend.

Ingredients

    Yield: two 9” layers or one 9” x 13”

    • 3 cups Pamela's Artisan Flour Blend
    • 1 cup (2 sticks) butter or butter substitute
    • 2 cups sugar
    • 4 eggs-large, beaten
    • 1- 1/2 tsp vanilla
    • 1 TBSP baking powder
    • 1/2 tsp salt
    • 1 cup milk
    • Vanilla frosting tinted pink or frosting of your choice
    • Sliced strawberries
Directions

    Beat sugar, butter and eggs together until lemon colored, then add vanilla. Mix together dry ingredients and add alternately with milk, starting with dry ingredients. Split between two round 9” pans or one 9 x 13" pan.

    Bake at 350° for 25 to 40 minutes depending on pan size, or until toothpick comes out clean. Spread frosting evenly on first layer and top with sliced strawberries. Repeat with second layer.

Hello There! I was so excited when i saw this recipe as my mom is gluten free. However, when i baked it the batter was super doughy. It was also quite hard and dense. I'm wondering what i did wrong as I followed the recipe to a T. I'd really appreciate if you responded. :)

I just made this for my niece's birthday. It was moist and delicious! I made sure to get perfectly ripe strawberries. I frosted with buttercream frosting made with Pamela's Vanilla Frosting Mix (I used 2 sticks of butter). I will definitely be making this again, with or without the strawberries. Would be delicious with any type of filling or frosting.

This recipe makes a very good cake! I got a lot of rave reviews. I used a coffee mascarpone filling and chocolate ganache frosting, instead of doing strawberries. I also added about 1/4 tsp xanthan gum.

The cake was very tender and moist.
