Lemon Poppy Seed Muffins

It’s hard to find easier or more flavorful muffins than these.

    • ¼ cup vegetable oil
    • ½ cup white sugar
    • 1 egg, large
    • 3 tablespoons lemon juice
    • Finely chopped zest from 2 lemons
    • 1 teaspoon vanilla extract
    • 1½ cups (225 g) Pamela's Bread Mix
    • 2 teaspoons baking powder
    • ½ teaspoon salt
    • 1 tablespoon poppy seeds
    • ¼ cup milk or milk substitute

Preheat oven to 400° with rack in center of oven. Grease 8 muffin cups, or line with paper liners and spray papers well with nonstick cooking spray.

In a large bowl, beat together oil, sugar, egg, lemon juice, zest, and vanilla until creamy. In another bowl, whisk together Bread Mix, baking powder, salt, and poppy seeds. In two additions each, alternately stir flour mixture and milk into egg mixture, stirring until smooth after each addition.

Scoop dough equally into muffins cups. Bake about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Serve muffins once cool enough to handle.

Delish tasting...

Delicious, but they were done at 15 minutes, and shouldn’t I’ve second guessed myself because at 18 mins they came out very dry. I didn’t miss any ingredients. They were also a bit flat, compared to the photo. Still delicious!

Muffins were great, but if you're working in a loud environment like mine, they'll deflate. They still tasted amazing and my family and I devoured them within days!

Used Pamela's baking and pancake mix instead of bread mix. Came out delicious!

Would this recipe work in a loaf pan? Thanks!

My first ever Pamela's recipe flop. :(. Sadly, I missed the part about adding the milk (that's what I get for trying to follow a recipe on my phone). and had to throw the baked muffins in the garbage. Wondered why the mixture was so thick as I added it to the muffin tins.

The only reason I'm posting is to help others not miss the milk.

I'm going to rate the recipe 5 stars even though mine flopped because I KNOW the muffins would have been great if I had added the milk - my mistake....
