- 1 19 oz package Pamela's Bread Mix
- 1/4 cup oil
- 2 large eggs
- Warm water, as per directions
- 1/4 cup melted butter, for brushing
- For decoration: fresh cranberries, rosemary sprigs
Yield:
RollsIn a 2 cup measuring cup add the eggs and oil. Fill with warm water up to the 2 cup mark.
Place the bread mix, yeast packet, and liquid mixture in a stand mixer fitted with the whisk attachment. Beat on medium high for 3 minutes.
Line the bottom of a 9" or 10" springform pan with parchment paper, then spray the bottom and sides with cooking spray. Place a small ramekin or other small oven safe bowl in the center of the pan. Spray again with cooking spray.
Use a 2" cookie scoop to scoop the dough into balls. Use greased hands to shape and smooth the balls. Arrange in the pan around the ramekin - dough balls will be closely touching. Spray with cooking spray.
Cover with a kitchen towel and let rise for 1 hour. Meanwhile, preheat the oven to 350°F.
Bake for 25 minutes, or until golden brown.
Let cool for 10-15 minutes, before releasing the pan. Transfer to a serving tray and remove the ramekin.
Brush with a melted butter and decorate as desired with cranberries and rosemary sprigs.
