Carrot Cake Bars

  • 1 2/3 cups Pamela’s All-Purpose Flour Mix
  • 2 cups of finely-grated fresh carrots
  • 3/4 cup oil (oil of choice)
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 3 eggs
  • 3 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • pinch of ground cloves
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon baking powder

  • Optional
  • 1/2 cup chopped nuts
  • 1/4 cup raisins

  • Icing of your choice - homemade or store bought

    Preheat oven to 350F.

    In a large bowl, beat together all the wet ingredients; oil, eggs, and vanilla extract.

    In a smaller bowl, mix together the dry ingredients; granulated sugar, brown sugar, Pamela's All-Purpose Flour, ground cinnamon, baking soda, fine sea salt and baking powder.

    Slowly mix in the dry ingredients into the large bowl of wet ingredients until well combined. Then, fold in the grated carrots.

    Place into a 9x13 baking dish. Bake for 30-40 minutes until completely cooked.

    If you like a more moist cake, after it is done baking, you can poke holes into the cake and pour a simple syrup or cream to make it extra delicious.

    If you'd like to add the carrot topping, melted white chocolate and put into two piping bags. Add food coloring to get the green and orange.
