Pamela’s Pancake and Baking Mix has been my favorite for years. Occasionally I try something new but it never works as well. I can count on this mix to make anything I want. I tried the Cider Donuts recipe this year and everyone loves them. I can’t stop making them! (I highly recommend a baby cakes electric unit for these as so much faster to scoop into and 3-4 minutes to bake). Usually I just make what ever I’m thinking I would like to have and adapt my own recipes because that’s the kind of cook I am….I just wing it without recipes or use them as a guideline. This mix ALWAYS works! My friends use it for ebelskivers because they like the taste and texture better than their original recipe.
