S’mores Cookies

Ingredients

    Yield:

    • 1 cup flour (can use a paleo blend)
    • ½ pack Pamela's Honey Graham Crackers
    • ½ tsp baking soda
    • ¼ tsp salt
    • ½ cup sugar (can use monk fruit granular & monk brown)
    • 1 tsp vanilla
    • 1/3 cup butter
    • 1 egg
    • ½ chocolate bar, chopped
    • Marshmallows (can use paleo friendly marshmallows)
Directions

    Preheat oven to 350F.

    Combine dry ingredients: flour, baking soda, and salt in a bowl.

    Crush grahams into little pieces. Can place in a ziplock bag and crush. Add crushed grahams to the dry ingredients. Stir to combine.

    In a separate bowl, add sugar, vanilla, eggs and butter. Hand stir or use mixer to combine.

    Add dry mixture to wet mixture and combine. Once combined, add chopped chocolate bar pieces and chopped marshmallows and combine with hand or stir slowly with spatula.

    Bake for 13-17 minutes or until golden brown.
