These Lemon Ricotta Pancakes are a delicious twist to our Pancake & Baking mix. These pancakes are melt-in-your mouth soft and tender, while being fluffy. These are perfect pancakes for spring or summer.
- 1 bag (use 3 cups) Pamela's Pancake & Baking Mix
- 3 eggs
- 2 cups of water
- 2 tbsp of oil
- 1/3 cup of ricotta
- Zest of 1 lemon
- 2 tbsp of lemon juice
Mix all ingredients together. If batter is to thick, add a little water to thin it out.
Heat skillet. Cook pancakes to liking, flipping once.
Serve hot with syrup or fresh fruit.
