Egg-free & Dairy-free Chocolate Cake

This is a full flavor, delicious chocolate cake, just without the eggs and dairy.

Ingredients

    Yield: One layer

    • 1 bag ofPamela's Chocolate Cake Mix
    • 1/2 cup applesauce or pumpkin
    • 1/2 cup oil
    • 3/4 cup rice milk
    • 1/2 tsp baking soda
    • 1/2 tsp baking powder
Directions

    Mix ingredients together for 1 minute on medium speed. Bake in greased 9' round at 350° for 35 to 38 minutes. Cake should be firm to the touch before removing from oven.

Cupcake fail!

I followed this recipe to make vegan-friendly cupcakes for my son’s 3rd birthday. They collapsed, stuck to the silicone mold, and fell apart. Huge bummer! I will try my best to salvage them because I don’t have time to make more but this was very disappointing. (Note: we did apple sauce, avocado oil and Ripple pea milk)

Thank you, the person I am making this for has protein allergies and nuts. So almond I cant but maybr soy. I dont know if coconut is something she likes but thank you!!

Hi Andrea,
We have not tried this specific recipe with the Vanilla Cake Mix. In general, our Chocolate Cake Mix is more forgiving when it comes to replacing the eggs. You can use an egg replacer with the Vanilla Cake Mix but it will give you a denser texture than if you use eggs.
