Cookie Cake

Delicious and so easy to make!

    Preheat oven to 325°.

    Cream butter and sugars until light and creamy. Add egg and vanilla. Once well combined, add Pamela's Baking and Pancake Mix and mix until incorporated. Add chocolate chips and nuts (if using), and complete the mixing process. Spread dough out in a well-sprayed 9" spring form pan. Flatten with a spatula or moist fingers, trying to get a smooth top.

    Bake for approximately 33 to 38 minutes, making sure the middle is cooked through. Let cool before removing from pan, and decorate as desired.

    Note: this recipe can be doubled for a taller cake.

Wow, oh wow!!! This is delicious!!! Absolutely doesn't taste gluten-free at all! So easy to make. I would give this 10 stars if I could!!!

I love this recipe. It is much better than some of the other chocolate chip recipes on the site and it is not dry. The recipe is hard to find on the web site as it doesn’t show up in a search with “chocolate chip.” I make it as bar cookies in a square or rectangular pan.

Family Favorite!

This is my husband’s favorite dessert so my teenage daughter loves to make it for him for any special celebration we can think of. It is delicious and easy to make. Highly recommend it.
