Firecracker Pancakes

Stacked high in red, white, and blue, these firecracker pancakes are the perfect sweet way to celebrate the 4th of July.

Ingredients

    Yield: 10

  • 1 cup Pamela’s Pancake & Baking Mix
  • 2/3 cup water
  • 1 tbsp oil
  • 3 egg whites
  • Red and blue food coloring
  • Optional: Whipped cream and festive sprinkles>
Directions

    Combine pancake mix, eggs, oil, and water in a large mixing bowl. Mix until well combined.

    Divide batter evenly into 3 bowls. Add blue food coloring into one of the bowls, stirring and adding more until your desired blue is reached. In another bowl, repeat this step with red food coloring.

    Pour ¼ cup batter onto a preheated, lightly oiled griddle (medium-low heat, or 350F for electric griddles) flip once, transfer to a rack, and repeat until you are done with the batter.

    Top with whipped cream, festive sprinkles, maple syrup, and whatever other toppings your heart desires.
