Vanilla Cupcakes with Vanilla Frosting

    I have IBS as well as having an intolerance to fats, which includes oils of any kind. Not finding any decent gluten free mixes that I’ve used in the past, I came across your vanilla cake mix and decided it was worth trying.
    When I made the cupcakes, I substituted the oil for the equal amount of nonfat Greek yogurt plus added an additional tsp. of water than the recipe calls for. I also added 4 eggs instead of 3 for fluffier cupcakes and almond flavoring, too. The cupcakes came out so much better than I ever expected and I think that next time I will add an additional 1/2 tsp water instead of 1 tsp. So thank you for making a delicious cake mix and I’m looking forward to trying additional products by Pamela!
