    What a great recipe. I had left over shredded carrot from Easter. What to do? Thank you Pamela. Although I did not have all the items it came out amazing. Hard critic daughter who is 12. She loved it.
    What I replaced: Did not add allspice – no replacement. Lemon zest for orange zest. For 1 cup of pineapple I replaced with 1 cup of apple butter (yup, yes I did). I also added more vanilla to frosting and water to accomodate my own viscosity. :) Happy Family. Thank you again. 4 stars.
