Pineapple Upside Down Cake

Gluten-Free Soy-Free Nut-Free

Enjoy deliciously sweet pineapple in this classic cake recipe.

Ingredients
      Cake:
    • 1 bag Pamela's Classic Vanilla Cake Mix
    • 1/2 cup oil
    • 3 eggs, large
    • 2/3 cup water
      Topping:
    • 3/4 cup dark brown sugar, packed
    • 1/2 cup butter
    • 1 can pineapple slices in water (10 slices)
    • Optional: maraschino cherries without stems
Directions

    Preheat oven to 325°.

    Melt butter in a 9" x 13" pan as oven is preheating. When melted, remove pan and sprinkle brown sugar over butter. Cover with pineapple slices, side by side. Place cherries in the centers of the pineapple rings.

    Beat eggs, oil, and water until well incorporated. Add dry mix and beat by hand or on medium/low for 2 minutes and pour evenly over pineapple.

    Bake for 37-43 minutes or until toothpick inserted comes out clean. Let stand for 8-10 minutes, then invert cake onto plate. Spoon any remaining syrup from pan over cake.

Do you have a suggested recipe for using your baking and pancake mix? That is all i have on hand and really want to make one of these pineapple upside dpwn cakes with it.

Made this pineapple upside down cake to take the following day. When it came out of the oven, it looked and smelled wonderful. Took it to a family gathering the following morning and it was no longer a good looking or smelling cake and the texture was so less than enjoyable as is the case with most gluten free cakes. Is there any gluten free cakes that hold up to the following day? You cannot always fix it the same day.

Hi, we are going camping this summer and hubby will only take the heavy cast iron dutch oven if I make him Pineapple Upside down cake over a campfire. I'd like to just pack the Artisan Blend and use that for various recipes. How to convert the Artisan Blend flour to the Vanilla Cake Mix please?

    • Hi MJ, The All-Purpose Flour Artisan Blend can be used in place of wheat flour in regular recipes, so the best advice would be to find a cake recipe and convert it using our flour. The Vanilla Cake Mix is a completely different blend, with sugar already in it.

My son asked for a pineapple upside down cake for his birthday. I am so glad my cousin introduced me to these mixes! It was delicious!! None of my gluten eating family members could tell it was gluten free.
