Peanut Butter Cookies with Nut Flour Blend

I really shouln't review the recipe because I made so many changes, but it gave me a great starting point. I used Pamela's bread mix instead of nut flour, butter instead of shortening, egg substitute, chunky almond butter (the kind that has to be stirred or it separates) and added chocolate chips. I followed the measurements and the temperature. My gluten eating husband loved them. I baked half of them in the oven and froze the rest. I took those out 4 at a time and baked them on a glass pie plate in the microwave. He still thought they were wonderful. I am amazed at the flexibility of your products.
