Linda's Cookie Cake

Chocolate chunks fill this delightful cookie cake for a wonderful flavor and exiting treat. Courtesy of Linda of Texas.

Ingredients
    • 1½ cups Pamela's Baking & Pancake Mix
    • ½ cup butter
    • ¼ cup white sugar
    • ¼ cup brown sugar
    • 1 egg, large
    • 1 tsp vanilla
    • 1 cup chocolate chips
    • ½ cup chopped nuts (Optional)
Directions

    Preheat oven to 325°. Make Pamela's Chocolate Chip Cookie recipe on the bag or as follows:

    Cream butter and sugars until light and creamy, add egg and vanilla. Once well combined, add Pamela’s Baking and Pancake Mix and mix until all incorporated. Add chocolate chips and nuts (if using), and complete the mixing process. Spread dough out in well sprayed 9” spring form pan. Flatten with spatula or moist fingers, trying to get a smooth top.

    Bake for approximately 33 to 38 minutes, making sure the middle is cooked through. Let cool before removing from pan, and decorate as desired.

    Note: this recipe was previously written as doubled, for a thicker cake.

Made this GF cookie cake for my son's birthday. No one believed me that it was gluten free! A great recipe that the whole family enjoyed!
