Preheat oven to 350°.
Combine all ingredients and mix to incorporate. Dough may be dry but will mix together. Add up to 1 TBSP extra water if needed. Do not over mix. Place rounded tablespoons of dough on greased cookie sheet. Flatten. Bake at 350° for 12 to 16 minutes. Cookies should be slightly firm to the touch. Let cool before removing with spatula.
This dough can be frozen. Form into a log, wrap in plastic wrap and freeze. To bake, remove the plastic wrap, cut log into 1/4-inch slices and bake following the directions above.
High Altitude Baking: increase oven temperature by 25° and bake according to recipe directions.
