Be careful to not overfill. I put ~2 Tablespoons of filling instead of 1/4 cup. Also fold over the dough using the parchment paper... It helps the dough from cracking open I noticed.

There are two dough options. I have had a failure with stuffed pie before with Pamela's but can't recall which dough I used. Does anyone know which one will yield a stretchy dough that doesn't break open while attempting to close the pies??

Filling is delicious - especially if you sub 1lb. of skirt steak (diced up to the size of marbles) instead of hamburg, brussel sprouts instead of cabbage, and shallots instead of onion. It was delicious!
The crust was a challenge. I ended up having to add more water than instructed and in the end, doubling up the thickness. It was the only way to get them to stay closed and not have the top crack open. Oh, and I had to crimp them all the way around because the back side that "folds over" was not happening.
I made my wife gluten full ones with the same stuffing. They were gorgeous. Next time, I think I'll try a different method of mixing the dough to see if I can get a more forgiving, less cracky, and stretchier result.

I doubled the recipe and still had plenty of filling. That's alright we had it on toast--chipped beef style. Kids loved it.

The filling part of this recipe makes enough for "15 to 18 hand pies" but the pie dough part of this recipe makes enough for "10 hand pies." I'm really glad I read the instructions thoroughly before shopping for the ingredients...looks like I'll have to double the pie dough ingredients...
