Artisan Hot Dog or Slider Buns

This was an epic failure, for me. The hotdog rolls were browned on the outside, and a digital thermometer read 210 degrees, but I found they did not rise. They were flat and also raw inside. It was a frustrating waste of time and money. (The outside was tasty, though.) I must stress that you have to use a stand mixer. Nothing (and I mean NOTHING) else can handle the thickness of this dough. I am sad :(

The recipe needs to be revised to say "In another bowl, mix all ingredients except yeast AND CLUB SODA" Is the flour a key ingredient to make this work? I used a different brand because I couldn't find yours and it was a total flop. The batter was runny - no way could it be piped out. I used to bake for a living so I'm no rookie....

I forgot to ask about the buttermilk, I don't have dry so can refrigerated be used instead?

I would like to try this, but can just regular water be used instead of the club soda?
