Gluten-Free Dairy-Free Egg-Free Vegan Soy-Free Nut-Free Peanut-Free Corn-Free

Add anything you like to this scone recipe, made with our Biscuit & Scone Mix.

Ingredients

    Yield: 6 large or 8 medium scones

    • 1 bag Pamela's Biscuit & Scone Mix
    • ½ cup sugar
    • 8 TBSP butter or or butter alternative, well chilled, cut in ½” pieces
    • 1 cup milk, soy, rice, or almond milk
    • ¼ cup dried fruit: cranberries, blueberries, raisins or currants
    • ¼ cup chopped nuts (optional)
    • Optional: brush with milk and sprinkle with sugar before baking
Directions

    Pre-heat oven to 375°.

    Combine dry mix and sugar. Using a stand mixer with paddle attachment or pastry blender, cut in butter until pea-sized crumbs are formed. Add milk, dried fruit and nuts and mix until just incorporated. Scoop onto a piece of parchment or plastic wrap and gently form into a round, 1” to 1½ ” high. Cut into wedges and place on greased or parchment covered cookie sheet.

    Bake in top third of oven for 20 to 24 minutes until just starting to brown.

Made these last night for my boys w/dried blueberries. In lieu of cutting them into wedges, I did a "drop" type scone. My 16 year old son ate his slowly "to savor it". When I asked if I could have a taste he said "just a tiny bite." :-) Each boy had one fo
eakfast this morning and then I hid them so there would be some left when I get home tonight!

I buy your baking mix in the large bag. It used to have the recipe for the basic scone on the package. I can not get my scones like they were when this recipe was on the bag. Can you please send it to me so I can fix my husband his favorite scones again? Thank you so much. I love all your products and am searching gfr the graham crackers in Tulsa, OK

    • Hi Marcia, Here is the original recipe for the scones from the Baking & Pancake Mix 4 lb bag: Currant Scones (but you can omit the currants or add other fruit). Enjoy!

Since we don't know what size bag you are referring to, and we might, as I do, have a partially used bag, it would be helpful to have the amount in cups you are talking to, instead of saying, "1 bag Pamela's"

    • Agreed. Here I am with the 4lb bag, and I haven't a clue the volume of mix to use. I'll wing it, but cups or volume by weight would be far more helpful in the baking world.

    • Hi Claudia, The Biscuit & Scone Mix bag contains 13 oz or 368.5 grams. So one batch of scones would use that amount of the mix. I hope that helps.
