Bisquick-type Mix

Use this simple mix as a substitute in recipes that call for Bisquick. Made with Pamela’s Baking & Pancake Mix.

Directions

    Cut butter or shortening into Baking & Pancake Mix until no lumps appear. Use as you would use Bisquick® for quick baking. There is no need to add baking powder, baking soda, salt or milk as they are already in the mix. Store in an airtight container in the refrigerator or freezer.

Explanation

If you have an old recipe that call for Bisquick, you use that recipe and include this in place of the Bisquick. You measure this after it is already mixed as you would have measured the Bisquick, then include it in the original recipe.

I made this and it seemed to have far too much shortening for the amount of flour baking mix. It made a dough ball. I’ve used Bisquick for years and it is always relatively dry and loose. I’ve added more baking mix, but am not so confident in using it. I used food processor, rather than a pastry blender. Maybe that the problem?

For the future, I wonder if you could just include the rest of the instructions for those of us who never use bisquik since we do come looking for GF recipes. Just saves time when you're trying to throw dinner together. :) Thank you.
