Easy to make, sweet and chewy; these cookies are a classic recipe everyone can enjoy.

Yield: over 100 1-inch square cookies, or forty-eight 1.5-inch squares

Seven Layer Bars

INGREDIENTS:

  • 1 box Pamela’s Honey Grahams
  • 6 TBSP butter, melted
  • ¼ cup sugar
  • TOPPING :
  • 1 can sweetened condensed milk (14 oz.)
  • 1 cup coconut, small flake (3 oz.)
  • 1 cup walnuts, chopped (or nut of choice)
  • ½ cup semi sweet chocolate chips
  • ½ cup milk chocolate, white chocolate or butterscotch chips

DIRECTIONS:

Preheat to 350° with rack in the center. Line a 9 x 13-inch quarter sheet pan or bar pan with parchment and spray well.

CRUST: Crush grahams in a plastic bag or food processor. Mix in melted butter and sugar, and then run processor or mix well. Press into bottom of prepared pan. Lay a piece of parchment over crust and press down with finger tips to get a smooth firm crust, pressed into the pan. Bake 10 to 12 minutes until puffy in spots or butter looks like it is sizzling in the pan. Cool on a wire rack until completely cool.

Once crust is cool, pour condensed milk over the whole crust. Cover with coconut, then the nuts, and top with the chips. Press in firmly.

Bake for 25 to 29 minutes until golden brown. Cool completely before cutting.

Lift bars out of the pan with the help of the parchment, remove parchment. Use a long straight edge knife sprayed with non-stick spray to cut the bars.

Makes over 100 1-inch square cookies, or forty-eight 1.5-inch squares. Store in air-tight container in between layers of wax paper if not eating right away.

    Is there a way to make this dairy free?

      Candace,
      We have not tried this recipe with dairy-free ingredients. Maybe some others will have some suggestions for you!
