Pamela’s Amazing Toasted Bread Crumbs

Seasoning and toasting croutons before crumbing imbeds layers of flavor, elevating this pantry staple to a popular must-have.

1/2 loaf Pamela’s Amazing Bread, prepared according to package instructions
3 tablespoons extra virgin olive oil
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder

Preheat oven to 200°. Cut Pamela’s Amazing Bread into one-half inch cubes. In a large bowl, toss with olive oil, garlic, salt, and pepper. Spread bread cubes in a single layer on a parchment-lined baking sheet. Toast in 200° oven for two hours. (Alternatively, you may toast the croutons in a 400° oven for about 30 minutes, turning at least once, and watching them closely so they don’t burn.) Allow to cool completely before processing or storing. Make these croutons up to two days ahead, if desired, and store in an airtight bag or jar.

In a food processor, process cooled croutons for 20 to 30 seconds or until fine crumb is achieved. Use immediately or store in the freezer sealed in an airtight jar or bag for convenient use anytime.

Yields about 3 cups of crumbs.
