Savory Pancakes with Prosciutto & Poached Egg

1 cup Pamela's Baking & Pancake Mix
1 large egg
3/4 cup water
1 tablespoon olive oil
3 tablespoons fresh basil, chopped
10 grape tomatoes, halved and quartered
1/4 cup green onions, diced
1/2 cup shredded Parmesan cheese
1/2 cup shredded mozzarella cheese
1/4 teaspoon salt
1/4 teaspoon pepper
Mix first four ingredients together until there are no lumps. Add the next seven ingredients and blend thoroughly. Pour 1/4 cup of batter onto a griddle, lightly oiled or sprayed with olive oil. Cook pancakes according to Pamela's directions. Serve with prosciutto and a poached egg or with another item of your choosing.
Yield: six - 4 inch pancakes
