Pamela’s Classic Gravy for Turkey or Chicken
Both Pamela’s Wheat-free Bread Mix and Pamela’s Baking & Pancake Mix can be used right from the package to replace flour in your favorite gravy recipe. This recipe below adds a rich nutty flavor by pan toasting the thickener first, an unusual step that sets this gravy apart.
SAFETY NOTE: Never turn your back on a pan of toasting flour. When toasting flour, be prepared to give it your full attention. Stir constantly to avoid burning but not so vigorously as to raise dust. Remember that dust from the flour could spark. Take extra care and keep a tight-fitting lid on hand to extinguish any stovetop flare-ups.
1/4 cup Pamela’s Wheat-free Bread Mix or Pamela’s Baking & Pancake Mix, as it comes from the package
drippings left in the roasting pan after fat is removed, about two tablespoons reserved fat, and 2 tablespoons unsalted butter OR 4 tablespoon unsalted butter
3 to 4 cups turkey or chicken stock, warm
In a non-stick pan over medium heat, toast Pamela’s Wheat-free Bread Mix or Pamela’s Baking & Pancake Mix, watching and stirring constantly until it browns slightly, 5 to 10 minutes. After removing the bird from the pan, drain fat from pan into a heatproof measuring cup and reserve. Return 2 tablespoons of fat together with 2 tablespoon unsalted butter to roasting pan over medium heat. Use spatula to scrape drippings from bottom of pan as butter melts. To make stovetop gravy without pan drippings, begin by melting 4 tablespoons of butter in a heavy saucepan or iron skillet. Add toasted Pamela’s Wheat-free Bread Mix or Pamela’s Baking & Pancake Mix, stirring constantly to form a thickening paste, or roux. Cook for at least 1 minute more. Roux will be bubbly and fragrant.

Add warm stock, 1/2 cup at a time, whisking to incorporate each addition fully to avoid lumps, until desired thickness is achieved. Season with salt and pepper to taste and remove from heat.
Yields about 1 quart.
