Stuffing

An easy and delicious, savory stuffing great for Thanksgiving or any time of year!

2 tbsp butter
1 onion, chopped
2 ribs of celery, chopped
Optional:1 red bell pepper, chopped
Optional:Italian spices to taste
1 loaf of day old
Pamela's Amazing Bread, cubed
1/2 to 1 cup chicken stock
salt and pepper to taste
Sauté the vegetables (and Italian spices) in the butter until just soft, be careful not to over cook. Put the cubed bread in a large mixing bowl and pour in vegetable mixture. Stir to incorporate. Add chicken stock slowly, just enough to wet the bread, be careful, too much will make it mushy. Salt and pepper to taste. Transfer to a casserole dish, cover, heat for 20 minutes at 325°. Serve warm.
Note: if you don't have day old bread, you can cube it, lay out on a cookie sheet and bake at 200° for 5 or 10 minutes to dry out. Should feel like croutons.
