Delicious, creamy lemon squares just like grandma used to make.

1 box Pamela's Lemon Shortbread, crushed
1/2 cup plus 2 tbsp Pamela's Baking ; Pancake Mix
1/4 cup packed brown sugar
1/4 cup melted butter
1 pkg neufchatel cheese, softened
1 cup granulated sugar
2 large eggs
3 tbsp lemon zest divided
1/4 cup lemon juice
1/4 tsp baking powder
2 tsp powdered sugar
Yield: 16 servings.
Preheat oven to 350°. Line an 8-inch square pan with foil, ends overhanging. Mix cookie crumbs, 1/2 cup Pamela's Baking ; Pancake Mix, brown sugar, and melted butter in bowl. Press into bottom of pan and bake 15 minutes.
Beat neufchatel cheese and granulated sugar with mixer until blended. Add eggs and remaining 2 tbsp Pamela's Baking ; Pancake Mix. Mix well. Blend in 1 tbsp lemon zest with lemon juice and baking powder. Pour over crust. Bake 25-28 minutes or until center is set. Cool. Refrigerate 2 hours. Sprinkle with powdered sugar and remaining lemon zest. Use foil handles to lift from pan before cutting.
