Pumpkin Pie Donuts

Yield: one dozen donuts, or six donuts and 20 donut holes

Pumpkin Pie Donuts

INGREDIENTS:

    DONUTS
  • 1¾ cups Baking & Pancake Mix
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1½ tsp cinnamon
  • ½ tsp allspice
  • 2 TBSP melted butter* or oil
  • ½ cup brown sugar
  • ¾ cup buttermilk
  • 2 eggs, large
  • ½ cup plus 2 TBSP canned pumpkin
  • 1 tsp vanilla
  • *recommended for best results
  • GLAZE
  • 1 cup powdered sugar
  • ¼ cup maple syrup
  • ½ tsp maple flavoring
  • 2 tsp water or milk
  • Equipment:
  • donut pan for regular sized donuts or donut holes

DIRECTIONS:

DONUTS

Whisk together Baking & Pancake Mix, salt, baking powder, and spices. Melt butter, cool slightly, and add sugar, buttermilk, eggs, and vanilla. Mix well to melt sugar. Add pumpkin to liquid ingredients and mix well. Add to dry ingredients and stir well to combine.

Preheat oven to 375°. Spray donut pans lightly with non-stick spray, fill spaces ¾ full (pouring from a 4-cup measuring cup or squeezed out of a pastry bag, or ziplock bag with corner cut off), and bake about 14 to 17 minutes (donuts should spring back when gently touched). Allow to cool a few minutes before gently removing from pan to wire rack to cool.

GLAZE

Mix all ingredients together in a wide, shallow bowl and beat until shiny and smooth. Dunk the tops of the donuts in the glaze and allow to set up before serving.

Chef's Note: For the over-the-top version, use crispy bacon bits on top of the maple glaze. Of course, simply tossing in sugar and cinnamon is a great way to finish these delicious donuts.

Could these be made into muffins. Looking for a gf pumpkin muffin recipe.

Yes, Sharon, they can be baked in a muffin tin!! You will have to play with the baking time to see what works. I would start at the low end, 14 minutes, and go from there.

Made these last weekend using an electric donut baker (similar to a waffle maker but has mini-donut shaped holes.) The donuts themselves are very good, but the icing isn’t great. Just do the powdered sugar or cinnamon and sugar coating if you want a sweet addition to the exterior. They puffed up very nicely and had a very noticeable pumpkin flavor. Good recipe for autumn!!

Delicious! Used a donut pan with the glaze – excellent recipe. My teenagers loved them too! very moist and full of flavor. The glaze adds just enough maple flavor, not overly sugary either. Definitely making these again. Also, very easy to make.

Is it ok to use the artisan flour mix? I don’t have the pancake one on hand.

    • Pamelas Customer Service November 3, 2014 at 4:29 pm #

      HI Cindy –
We have not tested this recipe using the Artisan, however, we welcome you to try if it you like. You will want to add leavening agents as the Baking & Pancake mix contains leavening agents and the Artisan does not.
Each cup of the B&P mix contains approximately 1tsp baking powder and 1/4 tsp baking soda.
Let us know how if goes if you try it!

Is there an egg free donut recipe?

    • Pamelas Customer Service October 19, 2016 at 2:00 pm #

      Hi Connie,
It looks like we do not have an egg-free donut recipe, but perhaps you could try an egg replacer in one of our donut recipes that only calls for one egg. Here is a list of all of our donut recipes: http://www.pamelasproducts.com/type/doughnuts/
