Oatmeal Cookie Ice Cream Sandwiches

Yield: 9 to 10 ice cream sandwiches

Oatmeal Cookie Ice Cream Sandwiches


    Cookie Sandwich
  • 1 bag Oatmeal Cookie Mix (13 oz)
  • 8 TBSP butter or butter alternative (with egg replacer, use 10 TBSP )
  • 1 egg, large (or equivalent of 2 large eggs with egg replacer)
  • 1 pint vanilla ice cream or non-dairy ice cream
  • Chocolate Coating
  • 16 oz gluten-free semi-sweet chocolate chips
  • 2 tsp oil, coconut or vegetable


Pre-heat oven to 350°.


Soften butter in stand mixer. Add dry mix and egg, combining until fully incorporated. Drop dough in heaping tablespoons (make 18 to 20 cookies) onto a parchment covered or greased cookie sheet; flatten before baking. Bake for 8 to 12 minutes. Let cool completely.


Place cookies in freezer to chill. Remove vanilla ice cream from freezer and allow to soften slightly. To make sandwiches, remove 2 cookies at a time from the freezer. Layer 1/2 inch ice cream on one chilled cookie, and lightly top with second cookie; wrap in plastic wrap, refreeze. Unwrap to serve or dip in chocolate.


Prepare chocolate coating by melting 16 oz chocolate chips with two tsp oil, stir until smooth. Chocolate should flow easily. Remove sandwich from freezer, unwrap and dip or spoon chocolate to cover sandwich. Place on waxed or parchment paper and refreeze. If you do not want to cover the entire sandwich in chocolate, another solution is to drizzle melted chocolate with a spoon in a zig zag pattern over sandwich, place on parchment and refreeze until served. If not serving immediately, wrap sandwiches in plastic and freeze.
