So easy, these traditional oatmeal cookies made into bars will fly off the counter! Made with Pamela’s Oatmeal Cookie & Bar Mix.

Oatmeal Cookie Bars

Yield: 9 to 12 bars

Oatmeal Cookie Bars


  • 8 TBSP butter or butter alternative (if you are using egg replacer, use 10 TBSP )
  • 1 bag Pamela's Oatmeal Cookie & Bar Mix (13 oz)
  • 1 egg, or the equivalent egg replacer
  • ¾ cup dried cherries, or nuts, medium chop (optional)
  • ½ cup gluten-free baking chips, coconut, etc. (optional)
  • Note: do not use more than 2 cups total optional ingredients


Pre-heat oven to 350°.

Soften butter with stand mixer. Add dry mix, egg and optional ingredients. Combine until fully incorporated.

Press dough into well sprayed foil or parchment lined 8 x 8-inch pan.

Bake for 25 to 30 minutes.

Cut bars while warm.

    your ingredients need to clearly specify one egg after the butter

    the amount of egg replacer before the amount of butter is changed to 10 Tblsp
