Add chocolate chips to our Oatmeal Cookie Mix to make these sweet bars.

Oatmeal Chocolate Chip Bars

Yield: 9” x 13” slab – ¾ ” thick to cut bars any size desired

Oatmeal Chocolate Chip Bars

INGREDIENTS:

  • 1 bag Pamela’s Oatmeal Cookie Mix
  • 8 TBSP butter, room temperature
  • 6 TBSP brown sugar
  • ½ tsp salt
  • 1 TBSP vanilla
  • 2 TBSP water
  • ½ to ¾ cup mini chocolate chips (or regular)
  • ½ cup walnuts, toasted and chopped (optional)

DIRECTIONS:

Pre-heat oven to 350° with rack in the center. Use a 9 x 13-inch baking pan (or quarter sheet pan) lined with well-sprayed parchment or foil for easy removal and cutting.

Cream butter and brown sugar in the bowl of a stand mixer using the paddle. Once soft and fluffy add Oatmeal Cookie Mix, vanilla, salt and water, beat until well mixed. Add chocolate chips and nuts, blend until all incorporated.

Press half the dough into the parchment covered baking pan. Using sprayed wax paper or plastic wrap, press dough until flat and even with no holes. Bake in pre-heated oven for 20 to 24 minutes. Top is completely golden brown when done (not just the edges).

Cool on a rack until almost totally cool. Remove from pan with help of liner handles. Lay on a cutting board until cool, then carefully peel off parchment. Cut using a long knife.

Store in airtight container in-between pieces of wax paper.

    Excellent results and yummy taste, but something confusing in the directions:“Press half the dough into the parchment covered baking pan.” There’s no mention about what to do with the other half of the dough. I pressed all of it into the bottom of a roughly 9 x 13 baking pan in one thin layer and it was fine. Please clarify the directions. Thank you!
