Lemon Blueberry Oatmeal Bars

Yield: 9 x 13 baking pan – ¾ ” thick

Lemon Blueberry Oatmeal Bars


  • 1 bag Pamela’s Oatmeal Cookie Mix
  • 8 TBSP butter, room temperature
  • 2 TBSP water
  • 2 TBSP honey, agave or maple syrup
  • zest of 1 lemon or ½ tsp lemon extract
  • ¾ cup dried blueberries
  • ½ cup toasted walnuts (optional)


Pre-heat oven to 350° with rack in the center. Use a 9 x 13-inch baking pan (or quarter sheet pan) lined with well sprayed parchment or foil for easy removal and cutting.

Zest lemons into bowl of stand mixer. Add butter and honey in same bowl of stand mixer and cream, using the paddle. Once soft and fluffy add Oatmeal Cookie mix, lemon extract (if using) and water, beat until well mixed, then add the rest of the ingredients and blend until incorporated.

Pat dough into pan, then cover with sprayed wax paper or plastic wrap and press into pan until flat and even, with no holes in the dough. Bake in pre-heated oven for 20 to 24 minutes. Top will be golden brown all across the top when done (not just the edges).

Cool on a rack until almost totally cool. Remove from pan with help of pulling up on the parchment or foil edges. Lay on a cutting board until cool, then carefully peel off parchment. Cut using a long knife.

Store in airtight container in-between pieces of wax paper.

    I am confused; do I make the oatmeal cookies from the mix, or do I use the mix as is? There is an egg replacer comment but no egg in the recipe. Can someone clarify? Thank you.

      Hi Traci,
      Thank you for your comment. We did make a mistake in the recipe and it should have no eggs, so we have removed the part about the egg replacer.
