Quick Biscuits with Sausage & Pesto

Biscuits:
1 cup Pamela's Baking ; Pancake Mix
1/4 cup butter
1/3 cup plus 1 tbsp milk
Pesto:
2 cups fresh basil
1/2 cup grated Parmesan
1/2 cup extra-virgin olive oil
4 medium sized garlic cloves
1/3 cup pine nuts, pistachios, or any other nut you prefer
salt and pepper to taste
Topping
1/2 lb. nitrate-free, gluten-free sausage
cheese of your choice
Yield: 4-6 servings
Preheat oven to 375°
Cook sausage in a frying pan, breaking into crumbles as it cooks.
In a large mixing bowl pour in Pamela's Baking ; Pancake Mix and cut in butter with fork or pastry blender until mixture resembles coarse crumbs. Pour milk into flour mixture while stirring with a fork. Do not let dough sit. Drop spoonfuls of dough onto a greased cookie sheet. Spread dough so you have room to place pesto and sausage crumbles on top. Bake 20 minutes, until bottom just starts to turn brown. Sprinkle with cheese of your choice and bake 2 more minutes.
